Hi-Hopes Menu
We hope to enhance your fishing experience by providing sustenance that pleases you.  We are not a big operation so we need parties to agree on which food selections they would like to request.

Because of reliance on local food sources we cannot always honor a group's first request so please suggest 2-3 entrees for each night you will be with us.  We can work around special requests.  These are suggestions so please feel free to inquire as to your preferences.  We want you to enjoy satisfying meals that we can professionally and realistically accommodate.
First Night's Suggestions
 Beef Stew
Extra lean beef cubes marinated in soy sauce and then slow cooked with carrots, onion and celery in a red wine sauce.  Homemade blueberry muffins or crusty baguette and a salad round off this hearty meal.
 Pork Chops
Thick chops are stuffed with tart apple slices that have been tossed with brown sugar and lemon.  Slowly baked and basted with a surprisingly good tomato sauce or a cherry glaze. Fluffy mashed or twice baked potatoes and fresh vegetable in season.
Braised Meat Balls
Meat balls made with French bread and summer savory are served with a beefy red wine sauce. Buttery mashed potatoes laced with optional fresh spinach is the perfect go with. 
Fresh vegetable or salad.
Pot Roast
Generous amounts of carrots, onion and potato are cast-iron slow cooked with browned chuck roast in a tomato sauce that is skimmed and made into thick brown gravy. Blue berry muffins, corn bread or crusty bread.
 Hot Sausage & Mushroom Rigatoni
A large amount of at least three varieties of fresh mushrooms are cooked down in browned, bulk hot sausage, onion and fresh rosemary.  Combined with broth, white wine, cream, freshly grated parmesan, rigotoni and baked to perfection.  Crusty bread and salad go well with this unique and delicious take on Rigatoni.
Beef Brisket Slow Cooked In Beer
Browned brisket is deglazed with a large amount of finely chopped carrot, celery and onion.  Slow cooked in broth and beer.  Deglazing ingredients are discarded and sauce is flavored and thickened.  Fresh vegetable and  potato of your choice.
Turkey Thanks Dinner
Whole turkey is stuffed, basted and baked.  Served with cranberry sauce with walnuts and flavored with Grand Marnier.  Yams in orange cups or streuseled sweet potatoes.   Whipped potatoes or dinner rolls.  Vegetable of your choice.  If you want to take home some leftovers for sandwiches you might have to fight the cats.
Sweet & Sour Meat Balls
 Browned meat balls, with a hint of fresh horseradish, are combined with onion, water chestnuts, pineapple chunks and brussel sprouts.  Served over warm rice with plenty of homemade traditional sweet and sour sauce.  (You can pick around the sprouts if you don't think you will like them.)
Camp Fire Meal
Cooler months only - Must be requested well in advance - Also weather permitting
Cook your own hotdogs, Kielbasa or sausage over the flames or we can roast burgers, potato wedges, mushrooms and corn-on-the-cob in the coals of a cozy camp fire in the woods.  Choose among side dishes of baked beans, potato salad or your choice.  Brown your mountain pies over the flames or create your very own decadent smores.

Breads will be home made when possible (if not high-quality store substitutes may be made.) 
       Second Night 
    *Spaghetti
Our spaghetti sauce is completely made from scratch.  Tomatoey, savory and thick with beef. Served with freshly grated parmesan over your choice of pasta.  Garlic bread and salad make you think you are in Tuscany - American style.
     *Turkey Tetrazenni
Turkey is combined with thin spaghetti, green pepper and onion in a cheesy mushroom sauce and baked.  Fresh vegetable or salad and crusty bread suggested.  Turkey meat is from whole turkeys cooked at home. 
   *Steak Salad
Generous amounts of steak strips are combined with a variety of greens, crispy vegetables and hard cooked egg slices in a taco shell bowl.  Topped with crispy hot crinkle fires (may be store bought but good) and a warm jalapeno cheese sauce. Blueberry muffins, corn bread or your choice.
*Lasagna
Three layers of noodles incorporate a meaty home made tomato sauce and three types of cheeses in this satisfying dish.  Garlic bread and salad go with. 

Desserts
Bourbon Walnut Pie
Rich pie filling of walnuts, chocolate, bourbon and maple syrup fills a graham cracker crust.  Served with lots of freshly whipped cream - dash of bourbon in your whipped cream is optional.   House Specialty
Cobbler
Best cobbler you have ever had - right out of the oven.  Local berries or peaches are dependant on what is good at the market that week - might need to go to an alternate selection.
Strawberry Short Cake
Strawberry season. Berries are partially crushed and made juicy in just enough powdered sugar.  Home-made shortcake and freshly whipped cream.
